Are you trying to say ( and this wouldn't surprise me ) that in spite of setting a profile if some other setting else where is set to 'on' as an output device it will result in my selection being turned to off, as the other takes precedence.Yes...They will default to off..You need to switch the one you want on and switch the HDMI and any other outputs too; to off...[don't get your hopes up]another thing...
when you select the device via the pulse audio control, some devices have multiple profiles...(select "device profiles") You can select them from the drop down...make sure that you have selected the right output...I also found that with one particular device, I actually needed to disable the other sound devices from that to force it to use the one that I wanted...
Again...you've probably already tried that...

I hadn't actually tried that [recently], when I looked before I seem to have grown some profiles that didn't appear to be there before;
High Fidelity Capture (A2DP Source)
High Fidelity Playback (A2DP Sink)
Handsfree Head Unit (HFP)
Off <---- this is where it defaults to irrespective of if I choose any of the previous 3 options or not.
